Product Features

For centuries, the “rock tea” of Wuyi Mountain in north-western Fujian Province has been recognized as one of the most valuable teas in the world. Its aromas are hauntingly fragrant, yet powerful.

Heaven In Water spent eight years searching for the finest tea from this unparalled tea-growing region for this offering. We carefully followed the production and tasted the results for three years before selecting this tea.

These old tea bushes are nestled among the red peaks of Wuyi Mountain. The bushes benefit from ideal temperatures and sufficient moisture, but rocky terrain forces each plant to struggle for survival. They do so by rooting deeply beneath the surface soil into the rock itself. This effort brings about leaves of great quality, though of lesser quantity, and brings a greater minerality to the resulting tea.

The steep slopes of this part of Wuyi Mountain necessitate picking by hand. The leaves are then transported down the mountain and processed in small batches. After rolling, great care is taken to end the oxidation process early without heating the leaves excessively. This tea undergoes an extended, slow baking process to bring about the signature flavor profile.

Unlike growing tea in a tea garden, in order to fully stimulate the content of this tea, it must be soaked in water at 100°C for 15 seconds or longer
